Here’s the trick. Do the same as you’ve been doing, but after you draw a shape click over to your Layers palette, you’ll see a new shape layer. In the shape layer you slouhd see Effects and under effects you’ll see Stroke . Double click Stroke and you can change the width of the stroke. Any new shapes you draw will have the new stroke width. You can also save this as a new style for future use.
